Jalapeno Popper "Pie" - now with Bacon! #keto #atkins #lowcarb

Yes, this does taste as good as it sounds. Even better, this is easy and gives you time to play Kwazy Kupcakes while it bakes.

Jalapeno Popper "Pie"

I served this with fresh strawberries coated in lemon and Stevia.

Remove seeds from peppers for mild version.

  • brick cream cheese (8 oz) softened
  • 1 chopped jalapeno pepper
  • 2 tbsp salsa verde
  • 1/4 cup shredded sharp cheddar cheese

  • 6 eggs
  • 1/3 cup milk
  • 2 tbsp heavy whipping cream
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper

  • 1/2 cup shredded sharp cheddar cheese
  • 6 slices bacon, chopped and cooked (optional for vegetarian version)
  • 1 sliced jalapeno

  • Preheat oven to 350 degrees. Combine the cream cheese, chopped jalapeno, salsa verde, and 1/4 cup shredded cheddar in a small bowl. Microwave for one minute, then mix well until mostly smooth.

In a separate bowl, combine the eggs, milk, cream, salt and pepper. Whisk until combined and smooth.

Grease a pie dish. Spread cream cheese mixture evenly over the bottom of the dish.

Pour the egg mixture over the cream cheese.

Top with the chopped bacon, shredded cheddar, and sliced jalapenos (artfully arranged if so desired).

Place in center of oven and bake for 35 minutes or until set. Center should not jiggle

Let rest 5-10 minutes, slice, and serve. The bottom layer of cream cheese will be gooey and ooze out a bit underneath. It's the best part!
