Balsamic London Broil & Zucchini Noodles - Keto Low Carb Atkins

 I just found out today that zucchini noodles (made with a spiralizer type contraption) are called "zoodles". Cute. So, I love one-pan dishes and so does the hubby since he is the cleaner-upper. This, is a one-pan dish. The flavor that comes to the "noodles" from using the pan juice left off cooking the steak is unreal. Everyone just kept going "MmmmMMM".


What you need (remember you need to marinate the steak, so prep this the night before or morning of):

1/3 cup balsamic vinegar
2 tbsp olive oil
2 cloves garlic, minced
salt and pepper to taste
1.5-2 lb London broil steak


5-6 zucchini, washed, ends cut off
1 tsp red chili pepper flakes
2 cloves garlic, minced
salt and pepper to taste
2 tbsp olive oil




Combine all marinade ingredients in a pan just big enough to fit the steak. Add steak and flip to coat. Cover pan in plastic wrap and shove it in the fridge to marinate.

Right before cooking steak, cut zucchini into noodles using spiralizer or other implement, sprinkle with salt and set aside.

When it's time to cook, heat a few tablespoons of olive oil in a large skillet over medium-high heat. Place steak in pan and allow to cook for 6-7 minutes on one side without moving. Flip meat over, cook another 5-8 minutes, depending on thickness. London broil can get tough so medium rare is recommended.

 
When the meat is done and crisped on the outside, pull it out of the pan and set aside to rest while cooking the zucchini noodles. Leave drippings in pan for noodles!


Lower skillet heat to medium. Add a bit more olive oil to the skillet with the drippings from the London broil. Add remaining ingredients and stir continually until noodles are beginning to brown and are softened. Let all those bits of goodness from the bottom of the pan cook into the noodles.

Serve immediately. I also served some garlic white rice for the rest of my family that is not not eating carbs. The marinade on the steak turned out fabulously and the flavor and texture on those noodles was like Asian stir-fried pan noodles. Delish!
