Lazy Day Tex Mex Hash - Low Carb - Atkins - Keto

I am not usually a store-bought ingredient kind of cook. But, everyone has a lazy day once-in-a-while. This was too easy and should not have tasted nearly as amazing as it did for how easy it was!

LAZY DAY TEX MEX HASH

One pan! Easy clean-up.
This can be vegetarian if you leave out the chicken. You can roll this up in a tortilla, serve it over rice, or, if you are avoiding carbs, serve it over crumbled pork rinds.

All store-bought and mostly store brand!


INGREDIENTS:
1 tbsp olive oil
1 jalapeno - small dice
3 cloves garlic - minced
frozen chopped peppers & onions
frozen corn kernels
can of black beans
chili powder
cumin
paprika
salt
mexican shredded cheese
sour cream (I used chive sour cream!)
(optional) frozen cubed grilled chicken


DIRECTIONS:
Heat 1 tbsp olive oil in a medium to large frying pan (depending on how many servings you need) over medium heat. Once hot, toss in garlic and jalapeno and cook for about a minute. Then, toss in frozen items (chicken, peppers, corn). The amount of everything is optional. If you are feeding several, or just want even easier leftovers, use the whole bags and cans. 


Cook, stirring occasionally, until mostly unfrozen. Add beans and seasonings. Spices are 1 to 2 teaspoons depending on your portions. Salt is to taste!

Once everything is thoroughly heated. Scoop it onto or into whatever vessel you are using, top with the shredded cheese and sour cream and enjoy!
 
Has over white rice.
Hash over crushed pork rinds.
 Calories per 1 cups serving: 225
Carbs 16g - 8g fiber = 8 net carbs
