Simple Side: Sautéed Zucchini - Low Carb

Sometimes it's not easy to get excited over your vegetables. Santa brought me a fancy mandolin and I couldn't wait to try it. You don't need one to make this dish, just thinly sliced zucchini will do. I just loved the reaction I got from the 6yo. I think it makes it taste better to her when they are "noodles".

It is served here with a Smoked Ham and Apple Salad Sandwich (recipe below).


Simple Sautéed Zucchini

3 small or 2 large zucchini squash
1 tbsp butter
1 tbsp olive oil
1 teaspoon Italian seasoning
salt & pepper to taste

Thinly slice zucchini. Heat oil and butter together over medium heat. Toss in zucchini and sprinkle with seasoning, salt, and pepper. 



Cook, stirring occasionally (I found tongs helpful with the cut I used) for about 5 minutes.

The sandwich is served on low carb bread from Kroger/King Soopers featured in another blog entry about good low carb breads. The salad is something I made up from leftovers. You can actually just enjoy it without bread or over salad greens and it's just as good.

2 cups cubed ham
1 apple small diced
1/2 cup leftover cranberry sauce or dried cranberries
1 tbsp sour cream
1 tbsp mayonnaise
1 tbsp parmesan cheese
fresh cracked pepper

Toss all ingredients into a bowl, stir, and serve.
