I had to check a few lists and sites to see if this also qualified for the Primal/Paleo diets. I know they say no potatoes, but yams are some of the lists! You would have to substitute the butter, but the rest is good. No matter what, it's tasty. I did it with fried eggs but this could make a great side dish or top some greens. This is adapted from a recipe found on Relish.
- 1 large yam, peeled and chopped
- 1 large shallot, thinly sliced
- 1/2 teaspoon paprika
- Freshly ground pepper & salt
- 1 tablespoon olive oil
- 3 tablespoons butter
- 2 garlic cloves, thinly sliced
- grated rind and juice of 1 lemon
- 1/2 teaspoon seafood seasoning
- 12 ounces crab meat
- 4 ounces baby spinach
Preheat oven to 350F.
Place yams and shallot on a large baking sheet. Sprinkle with salt, paprika, and pepper. Drizzle olive oil over top and toss. Place in oven and roast 20 to 30 minutes, or until yams are tender.
Melt butter in a large skillet over medium heat. Add garlic, lemon rind, seafood seasoning, and crab. Cook 1 minute. Add lemon juice and spinach. Toss until coated with butter. Add potato mixture. Serve warm.
I used a container of crab claw meat found in the seafood section of the grocery store. Any crab meat would work for this.
