3 mashed bananas
4 beaten eggs (I was out of eggs so I used EnerG egg replacer)
1/4 cup Da Vinci sugar free syrup
4 tbsp vegetable oil
1 tsp vanilla extract
¼ cp arrowroot starch
½ cp coconut flour
¼ cp almond meal
1 tbsp flaxseed meal
¾ tsp baking soda
½ tsp baking powder
½ tsp sea salt
1 1/2 tsp cinnamon
½ cp semi-sweet chocolate chips

Preheat oven to 350 degrees. Line a muffin pan with cupcake papers and set aside.
In a medium bowl, mix the wet ingredients (bananas through vanilla extract) together well.
In a large bowl, whisk together the dry ingredients (arrowroot starch through cinnamon) in a separate bowl.
Combine the wet and dry ingredients in the large bowl until well-incorporated, and then stir in chocolate chips.
Fill muffin cups 2/3 full and bake 19 minutes. Allow to cool on a rack long enough to dig in.
Makes 1 dozen muffins.
I hate that they changed their site layout and I have to look it up, but these have 3 grams of fiber per serving, so 10 net carbs. Also, I did not use flavored sugar free syrup, but they didn't have it listed. Oh, and, you can substitute the chocolate chips for sugar free and lose a few more carbs per serving!
