Mexican Egg Fiesta Skillet

One pan dish! High protein, low mess.


What you need:

Can of refried beans
Small can diced green chiles (I used HOT)
4-6 eggs (depending on how many you are serving)
3-4 slices of bacon, chopped
shredded cheddar cheese
a few green onions, sliced
some fresh cilantro
1 diced tomato
1 diced avocado

Optional:
black olives, sour cream, salsa or hot sauce
tortillas to serve with

What you do:

Preheat a large skillet to medium heat.
Toast tortillas about 30 seconds per side and set aside.
Add bacon and fry up until desired doneness then drain on paper towel, leaving bacon fat in pan. Add refried beans, green chiles, and 1/2 cup water to pan and stir until creamy. Reduce heat to simmer. Make divots in beans with wooden spoon and crack eggs into them, being sure to space them apart as evenly as possible. Cover the pan and let cook until the whites are all solid. Uncover and sprinkle with cheese, bacon, green onions, tomatoes, avocado, cilantro, etc. Done.

I recommend the Mission low carb tortillas. The Tortilla Factory ones are all right, but the Mission brand is most like the real deal.
